El objetivo de este estudio fue determinar el nivel óptimo de inclusión de pulpa de naranja (PN) en dietas para corderos en un sistema in vitro, determinar la bioaccesibilidad de fenoles y flavonoides totales en carneros, y evaluar el comportamiento productivo de corderos alimentados con contenidos crecientes de PN y efecto antioxidante en la carne. En el primer experimento se evaluaron los parámetros de fermentación in vitro con niveles crecientes de PN deshidratada (PND; 0, 5, 10, 15 y 20 %) en dietas para corderos, donde 0.5 g de cada dieta se incubaron durante 0, 6, 12, 24, 48 y 72 h. La producción de gas se midió por desplazamiento de agua en cada horario indicado, al final de la incubación se registró el pH y se determinó la concentración de N-NH3 y AGV; así mismo, se evaluó la degradación in vitro de la materia seca (DIVMS) en los horarios señalados, el diseño experimental fue completamente al azar. En el segundo experimento se medió la bioaccesibilidad de fenoles (FeT) y flavonoides (FlT) totales con el uso de cuatro carneros de la cruza Suffolk x Dorset (45 ± 2 kg PV) cánulados en rumen y duodeno, distribuidos en un diseño cuadro latino 4x4, cuatro períodos de 15 d, 12 de adaptación a la dieta y 3 para la recolección de muestras con muestreos cada 4 h. Los carneros fueron suplementados con contenidos crecientes de PND en la dieta como tratamientos (T) (T1= 0, T2=17.5, T3=35 T4=52.5 %). Se recolectaron muestras de líquido ruminal y contenido duodenal 0, 4, 8, 12, y 24 h después de suministrar el alimento, las variables evaluados fueron degradación in situ de la MS (DISMS) y bioaccesibilidad de fenoles (FeT) y flavonoides (FlT) totales y pH. En el tercer experimento se evaluó el comportamiento productivo de corderos alimentados con contenidos crecientes de pulpa de naranja (PN) y su efecto en la oxidación de lípidos en la carne, con los tratamientos (T), T1=0, T2=13, T3=26 y T4=39 % PN respectivamente. Se evaluó la ganancia diaria de peso (GDP), consumo de MS (CMS), conversión alimenticia (CA) y la oxidación de lípidos en la carne durante la vida de anaquel. El diseño experimental fue completamente al azar y la comparación de medias se realizó con la prueba de Tukey. Los resultados del primer experimento mostraron que a las 6 h de incubación, la producción de gas fue de 103.23b, 103.69b, 111.27b, 113.63b, 120.8a mL y la DIVMS de 36.13b, 37.03b, 39.36b, 40.80b, 45.12a% para los niveles de 0, 5, 10, 15, 20% de PND, respectivamente. No existió diferencia (P>0.05) en la concentración de AGV, pero el N-NH3, se redujo (P<0.05) con 15 y 20% de PND. En el segundo experimento se determinó que la bioaccesibilidad de FeT fue mayor (P<0.05) en los carneros del T4 con respecto a los del grupo testigo y la bioaccesibilidad de FlT fue superior (P<0.05) para los tratamientos que incluyeron PND (T2, T3 y T4), sin diferencia entre estos. Los resultados del tercer experimento mostraron que la inclusión de contenidos crecientes de PN en la dieta no afectó (P˃0.05) las variables productivas de los corderos; sin embargo, la oxidación de lípidos fue superior (P<0.05) en la carne de los corderos del T1 y T2, donde se incluyeron los contenidos más bajos de PN (0 y 13 % PN, respectivamente). La inclusión de 26 y 39 % de PN en la dieta (T3 y T4, respectivamente) retraso la oxidación de lípidos en la carne de corderos durante la vida de anaquel evaluada. _______________ LAMBS PERFORMANCE FED WITH INCREASING LEVELS OF ORANGE PULP AND ANTIOXIDANT EFFECT ON MEAT. ABSTRACT: The objective of this study was to determine the optimal level of inclusion of orange pulp (OP) in lamb diets in an in vitro system, the bioaccessibility of phenols and total flavonoids in rams fed with different levels of OP, and the productive performance of lambs fed with increasing levels of OP and antioxidant effect on meat. In the first trial, the parameters of in vitro fermentation with increasing levels of dehydrated OP (0, 5, 10, 15 and 20 %) in lamb diets were evaluated using 0.5 g of each diet for incubated at 39 ° C for 0, 6, 12, 24, 48 and 72 h. Gas production was measured by displacement of water at each indicated time, and at the end of the incubation pH, N-NH3 and AGV concentration and in vitro dry matter degradability (IVDMD) were measured; the experimental design was completely randomized. In the second trial, bioaccessibility of total phenol (FeT) and flavonoids (FlT) were measured in four Suffolk x Dorset cross rams (45 ± 2 kg PV) provided with ruminal and duodenal cannula, Latin desing 4x4, four periods of 15 d, 12 d to diet adaptation and 3 d for samples collection with sampling at 4, 8, 12 and 24 h. Rams were supplemented with increasing levels of OP in the diet as treatments (T) (T1=0, T2=17.5, T3=35, and T4=52.5 %). Samples of ruminal fluid and duodenal content were collected in the established times and in situ DM digestibility (ISDMD), FeT and FlT bioaccesibility and pH was measured. In the third trial was evaluated the productive performance of lambs fed with increasing levels of orange pulp (OP) and its effect on meat lipid oxidation, and the treatments (T) evaluated were T1= 0, T2= 13, T3= 26 and T4= 39% OP. Daily weight gain (DWG), DM consumption (DMC), feed conversion (FC), and meat lipid oxidation during shelf life were evaluated. A completely randomized design was used and treatments means were compared with Tukey test. In the first trial, at 6 hours of incubation, the gas production was 103.23b, 103.69b, 111.27b, 113.63b, 120.8a mL and IVDMD of 36.13b, 37.03b, 39.36b, 40.80b, 45.12a % for 0, 5, 10, 15, 20 % of OP, respectively. There was no difference (P> 0.05) in VFA concentration, but N-NH3 levels were reduced (P<0.05) with 15 and 20 % of OP. In the second trial, the bioaccessibility of FeT was higher (P<0.05) in the rams of theT4 than in the control group and the bioaccessibility of FlT was higher (P <0.05) for treatments that included OP (T2, T3 and T4), without difference between these treatments. The inclusion of 20 and 52 % of DOP improved ruminal in vitro and in situ fermentation associated to the DM degradation. The inclusion of 52.5 % of OP aport the best concentration of total phenols and flavonoids in the duodenum to be bioaccessibles for antioxidant effect. The inclusion of 39 % OP in the diet of lambs does not affect animal production performance, and indicating the feasibility of replacing grains by OP; also FeT and FlT reduces meat lipid oxidation during shelf life.
